【摘要】:ThisInternationalStandardprovidesguidanceon:—obtainingdataonthedetectionofchemicalstimulithatevokeresponsestoodour,flavourandtastebya3-AFC(three-alternativeforced-choice)procedure;—theprocessingofthedatatoestimatethevalueofathresholdanditserrorbounds,andotherstatisticsrelatedtothedetectionofthestimulus.Typically,theprocedureswillbeusedinoneofthefollowingtwomodes:—investigationofthesensitivityofassessorstospecificstimuli;—investigationoftheabilityofachemicalsubstancetostimulatethechemoreceptivesenses.(Althoughexperimentsmayencompassbothmodes.)Examplesofthefirstmodewouldincludestudiesofthedifferencesamongindividualsorspecifiedpopulationsofindividualsinsensitivitiesandoftheeffectsofage,gender,physiologicalcondition,disease,administrationofdrugsandambientconditionsonsensitivity.Examplesofthelattermodewouldinclude:—studiesinflavourchemistryandtheimpactofspecifiedchemicalsontheflavouroffoods;—classificationofchemicalsfortheirimpactonhumans,ifpresentintheenvironment;—studiesontherelationshipofmolecularstructuretocapacityofachemicaltoactasastimulant;—qualityassuranceofgaseouseffluentsandofwater,foodsandbeverages;—studiesinthemechanismofolfaction.Inbothmodesthewayinwhichprobabilityofacorrectresponsechangeswithintensityofstimulus,i.e.theslopeofthedose/responsecurve,couldbeanimportantaspectofthestudyaswellasthethresholdvalue,andthedataprocessingproceduresdescribedhereprovidethisinformation.ThefocusofthisInternationalStandardisondatarequirementsandoncomputationalprocedures.Regardingthevalidityofthedata,thetextisrestrictedtogeneralrulesandprecautions.Itdoesnotdifferentiatebetweendetectionanddifferencethresholds;fundamentally,theproceduresmeasureadifferencethresholdbecauseatestsampleiscomparedwithareferencesample.Typically,thereferencesampleisnotintendedtocontainthestimulusunderinvestigation,buttheGuidelinesdonotexcludeexperimentaldesigninwhichthereferencecouldcontainthestimulus,oritmightnotbeknownifthereferencecontainsthestimulus.TheGuidelinesdonotmeasurearecognitionthresholdasdefinedinISO5492.TheydonotaddressthestandardizationofmethodsofdeterminingairqualityasaEuropeanStandardisinpreparation[9].
